While you’re grilling chicken, fish or steak for your next meal, you may want to consider this side dish. It only takes a minute to prepare and is grilled for 5-6 minutes resulting in a nice smoky, charred flavor that is sure to go perfect with any grilled protein of your choice.
4 Medium Zucchini
2 Tablespoons Extra Virgin Olive Oil
2 Teaspoons Za’taar, plus additional for garnish
1/2 Teaspoon Kosher Salt
Pomegranate Molasses, enough to drizzle
Cut the zucchini lengthwise into halves. Then cut the halves into halves again. Place into a bowl and toss with the oil, Zá atar and salt. Grill for 5-6 minutes. Remove from grill and plate, adding additional Zá atar seasoning and drizzle the pomegranate molasses over the top. Serves 4.
