After making the apple pies, apple crisp or baked apples, you probably still have apples left from your recent apple picking adventure. I know I do. One other thing I like to do with extra apples is make apple compote. The compote can be used for a multitude of dishes, like a topping for pancakes, waffles, steel cut oats, yogurt and even goes well with a pork roast, chops or tenderloin. Or, just by itself!
2 Medium Apples, any will do
1/8 Cup Apple Cider or Orange Juice
1/2 Teaspoon Cinnamon or Apple Pie Spice
3 Tablespoons Brown Sugar
Pinch of Salt
1/4 Cup Raisins or Dried Cranberries (optional)
Peel the apples and cut into quarters. Cut out the core and slice the apples about 1/8” thick. Place the apple slices, cider or orange juice, cinnamon or apple pie spice, brown sugar, pinch of salt and the raisins or dried cranberries in a 2-quart pot. Blend well and turn the heat on to medium and cook for 10-12 minutes. Serves 4.
