Not Your Average Chicken Salad

Once you read the first ingredient listed, you may be thinking, is she seriously using canned chicken? Yes, yes I am. The only thing I regret is not using it sooner. The meat is lean and very tender. And not only that, it’s a quick meal prep. The flavors and textures of this savory, sweet, and crunchy chicken salad are exactly what you’re looking for in a great sandwich.

1 – 12oz Can of Lean Meat Chicken (drained) yield approximately 7oz.
1 Cup of Grapes Halved (red or green)
1 Celery Stalk Thinly Sliced
2 Tablespoons Finely Minced Red Onion
2 Tablespoons Plain Greek Yogurt
1 Tablespoon Mayonnaise
2 Tablespoons Chopped Tarragon (dried is fine)
2 Tablespoons Finely Chopped Fresh Parsley
1/4 Cup Chopped Candied Pecans or Slivered Almonds
Salt and Pepper to Taste

Add the yogurt and mayonnaise to a mixing bowl mix until well blended. Add the remaining ingredients and toss until well coated. Always taste and adjust seasoning. This will be enough for 3 sandwiches. Place a couple of Boston lettuce leaves to the bread of your choice and pile 1/3 of the chicken salad. I’ve also added a scoop to my regular mixed greens salad.
