I enjoy eating oysters any time of year. Whether sitting by the ocean, or fireside, a tray of oysters in hand with a tall glass of ice-cold beer, or a flute of Cava, I’m in my happy place. I squeeze a little lemon over the oysters and then add a touch of mignonette sauce. This sauce is a perfect accompaniment to the crisp brine of the oyster.
Mignonette Sauce
1 Medium Shallot, Minced
1/2 Cup Champagne Vinegar
1 Tablespoon Pink Peppercorns, Crushed
Mix the ingredients together and refrigerate for about 2 hours. When ready to serve, add about 1/8 cup of Cava or any other sparkling wine. Spoon over the oysters and enjoy!
