Ricotta and Marmalade Bruschetta

I had some leftover ricotta from another recipe I made this week. I also had some brioche that needed to be used up. Immediately I knew what I would make. I remember this snack from my childhood. My Sicilian uncle made this often and it soon became one of my favorite snacks growing up. Don’t skip the black pepper, it really melds the flavors together. Give it a try, you won’t be sorry.

2 pieces of brioche
3/4 cup of ricotta, (whole milk)
1/4 teaspoon lemon zest
2 tablespoons orange marmalade, divided
Freshly ground black pepper

Toast the brioche. In a small bowl, mix the ricotta and lemon zest. Split the ricotta mixture between the two slices and spread on the toast. Add the marmalade to each slice of toast. Add about 2-4 turns of freshly ground black pepper to each slice. Serve it with a double espresso and enjoy! You can use whatever bread you want. Ciabatta is a great vessel for the creamy goodness too. You can make smaller bruschetta for snacks or even an addition to your brunch menu. Serves 1-2.
