It’s that time of year when pumpkin is everywhere. And I do mean everywhere. Pumpkin flavored coffee, beer, baked goods, energy bars, cereals, yogurt, and so on. The beverage industry alone projects the pumpkin spice category to exceed about $2.4 billion by 2031!
If you like pumpkin, you’ll really like this smooth and creamy smoothie.
1 Cup Almond Milk or Milk of Choice
1 Cup Pumpkin Purée (not pie filling)
1-2 Teaspoons Pumpkin Spice Mix
Protein Powder (optional)
2 Teaspoons Pure Maple Syrup
1/4 Teaspoon Vanilla Extract
Pinch of salt
4 Ice Cubes (optional)
Add all ingredients, in order listed above, to a blender. You can add ice cubes if you like your smoothies extra cold. If poured into a glass, as opposed to using a dedicated smoothie blender with container, add a pinch of the pumpkin spice for garnish. Yields 1 serving.
