White Bean and Tuna Salad

Packed with flavor and protein, it’s great for a hearty lunch, dinner, or even a snack. A great mixture of textures and flavor will have you craving this delicious and healthy salad often.  Although any tuna of your choice may be used, the quality and flavor of tuna packed in olive oil certainly elevates this dish.

For the salad:

1 15.5 oz. can of cannellini beans
1 6.7 oz. jar of good quality tuna in olive oil
1/2 cup finely minced parsley
1/4 cup finely diced red onion
2 tablespoons sun-dried tomatoes, in olive oil, drained
1 tablespoon capers, rinsed and chopped
2 green onions, thinly sliced
1 celery stalk, thinly sliced
Salt and pepper to taste

For The Vinaigrette:

You just have to remember the ratio of 3 parts oil to 1 part acid to make a great vinaigrette. There are many different combinations of ingredients you can use to fit the flavor profile you’re looking for. See the link below for some ideas.
